Blackberry Crepes with Whipped Topping

Enjoy a French crepe with blackberries.

  • 1 whole egg white
  • 1/4 cup plain low-fat yogurt
  • 1 white bread slice
  • 1 pinch ground nutmeg
  • 1/2 tsp. vanilla extract
  • fat-free whipped topping
  • 1 Tbsp. PolanerĀ® Sugar Free Seedless Blackberry Preserves


In a blender, combine egg, yogurt, bread, nutmeg and vanilla and blend until smooth. Pour into a non-stick crepe pan; tilt pan to coat bottom. Cook 2 minutes until top is set and underside slightly browned. Flip and cook other side 30 seconds. Stack crepes between wax paper. Spread Blackberry preserves on crepe and fold. Add whipped topping and drizzle with heat Blackberry preserves.
