Fat Free Strawberry Cheese Cake

A tasty, fat free strawberry cheesecake that will have your guests asking for the recipe.

  • 1/2 cup graham cracker squares
  • 1 tsp. margarine
  • 16 oz. fat-free cream cheese
  • 1 cup non-fat cottage cheese
  • 1/4 cup milk
  • 1/3 cup sugar substitute
  • 2 Tbsp. all purpose flour
  • 1 tsp. vanilla extract
  • 1/2 tsp. lemon zest
  • 3/4 cup egg substitute
  • 1/4 cup fat-free sour cream
  • 1 pint strawberries (washed and hulled)
  • fresh mint (for garnish)
  • 1 cup Polaner® Sugar Free Strawberry Preserves


Preheat oven to 375°F. In a small bowl combine graham cracker and margarine. Press mixture firmly on to the bottom of a 8-inch spring form pan. Set aside. Cut up cream cheese and set aside. In food processor add cottage cheese and milk, cover and process until smooth. Add the cut up cream cheese, sugar, flour, vanilla and lemon; cover and process until smooth. Pour in egg and sour cream and blend to combine. Pour into prepared pan. Place on a baking sheet. Bake at 375°F for 30 - 45 minutes until set. Cool 15 minutes. Using a knife loosen sides of cheese cake, continue to cool in pan 30 minutes. Remove. Cool completely. Arrange strawberries on top of cheese cake. Pour on Polaner® Sugar Free Strawberry Preserves. Garnish with fresh mint. Serves 12
