Low Fat Strawberry Cheese Cake (no bake)

A simple, easy-to-make strawberry cheesecake recipe that requires no baking.

  • 2 tsp. Gelatin (unflavored)
  • 2 Tbsp. water
  • 1/3 cup sugar substitute
  • 2 1/2 cup low-fat cottage cheese
  • 1 tsp. lemon zest
  • 1 tsp. vanilla extract
  • 14 graham cracker squares
  • 1/4 cup reduced-calorie margarine
  • 1 pt. strawberries (washed and hulled)
  • fresh mint (garnish)
  • 1/2 cup PolanerĀ® Sugar Free Strawberry Preserves


In a small saucepan sprinkle gelatin over cold water; let stand 1 minute. Cook over low heat, stirring constantly, 2 minutes or until gelatin dissolves. Let cool. Add sugar substitute to cooled gelatin. In a blender combine cottage cheese, lemon peel and vanilla; cover and blend until smooth. Gradually add gelatin mixture to cottage cheese mixture. Place this mixture in a bowl and chill until slightly thickened, 10 minutes stirring occasionally. Combine graham cracker crumbs, melted margarine and 1 Tbsp. sugar substitute. Press crumb mixture firmly into a 9-inch pie plate. Spoon cottage cheese mixture into prepared crust; chill 15 - 20 minutes. Top with strawberries; brush with melted preserves. Garnish with fresh mint. Serves 12
