Apricot Bars Recipe

Ingredients
Crust:
- ½ C. butter, softened
- ¼ C. granulated sugar
- 1 C. all-purpose flour
- 2 tsp. Spice Islands® Pure Almond Extract
Filling:
- 2 eggs
- ¼ C. granulated sugar
- 2 Tbsp. all-purpose flour
- ¼ tsp. Clabber Girl® Baking Powder
- 2 Tbsp. lemon juice
- 2/3 C. Polaner® Organic Apricot Preserves
Directions
Crust:
- Preheat oven to 350˚F.
- In a large bowl, mix the crust ingredients until a crumbly meal is formed. It will not be a solid dough.
- Press into an 8×8-inch pan and bake for 15 minutes.
- Remove from the oven.
Filling:
- While crust is baking, prepare filling.
- In a medium bowl, whisk together the eggs and sugar until smooth and a pale yellow.
- Whisk in the flour and baking powder until well blended.
- Whisk in the lemon juice and preserves until well blended.
- Pour filling over baked crust and bake for 20 minutes.
- Cool in the pan.
- Dust with powdered sugar, if desired, and cut into squares.
- Store leftovers in the refrigerator.
Tips
Recipe can be easily doubled and baked for the same length of time.
