  1. In a small, microwave-safe bowl, combine the gelatin and water until all the gelatin is moistened; set aside.
  2. In a large mixing bowl, blend the fruit spread and cream cheese until smooth. Blend in food coloring, if desired. Place in the refrigerator.
  3. In a medium mixing bowl, whip 1 cup of the heavy cream until it forms stiff peaks; set aside.
  4. Place the bowl of gelatin in the microwave and warm for 10 seconds. The gelatin should be back to a liquid state.
  5. Remove the fruit spread mixture from the refrigerator and blend in the gelatin.
  6. Gently fold in the whipped cream until no more white streaks remain. Do not overmix or the whipped cream will deflate. Place in the refrigerator.
  7. In the medium bowl used earlier, whip the remaining heavy cream with the powdered sugar and vanilla until stiff peaks are formed.
  8. In short glasses or parfait cups, layer strawberry mousse, crumbled shortbread cookies and whipped cream.
  9. Top with fresh strawberries.
