Strawberry Mousse Parfait Recipe

Ingredients
- ½ pkt. (3.5g) unflavored gelatin
- 2 Tbsp. water
- ½ C. Polaner® Verry Berry Strawberry Fruit Spread or Organic Strawberry Preserves
- 4 oz. cream cheese, softened
- Red food coloring, optional
- 2 C. heavy cream, cold
- 2 Tbsp. powdered sugar
- ½ tsp. Spice Islands® Pure Vanilla Extract
- Shortbread cookies
- Fresh strawberries
Directions
- In a small, microwave-safe bowl, combine the gelatin and water until all the gelatin is moistened; set aside.
- In a large mixing bowl, blend the fruit spread and cream cheese until smooth. Blend in food coloring, if desired. Place in the refrigerator.
- In a medium mixing bowl, whip 1 cup of the heavy cream until it forms stiff peaks; set aside.
- Place the bowl of gelatin in the microwave and warm for 10 seconds. The gelatin should be back to a liquid state.
- Remove the fruit spread mixture from the refrigerator and blend in the gelatin.
- Gently fold in the whipped cream until no more white streaks remain. Do not overmix or the whipped cream will deflate. Place in the refrigerator.
- In the medium bowl used earlier, whip the remaining heavy cream with the powdered sugar and vanilla until stiff peaks are formed.
- In short glasses or parfait cups, layer strawberry mousse, crumbled shortbread cookies and whipped cream.
- Top with fresh strawberries.
